This is the recipe of Fustuqya, from the book of dishes, composed by Muḥammad bin al-Karīm al-Baghdadi in 1226AD – 623 AH.
Take some chicken breasts, and boil in water mixed with a little bit of salt, until half cooked, at this stage remove from the pot and drain.
Take the meat out of the bones, slice it into fine threads, then place it in a pot, and cover it with water.
Take peeled Pistachios, as much as you want, crush them in a mortar with a pestle, and after that add to the pot, stir and let everything boil.
When almost cooked, take double the size of Pistachios in sugar, add it to the pot, stir well until the mixture is convoluted.
